One-Pot Ground Beef Stroganoff | March 2021

Each month, the Food Shelf selects a Recipe of the Month, and provides shoppers with all the ingredients necessary to prepare the dish, along with a recipe card. Our March 2021 Recipe of the Month is One-Pot Ground Beef Stroganoff and is available beginning Monday, March 8th, while supplies last.


Prep Time: 10 mins

Cook Time: 30 mins

Serves 4


Ingredients:

1 ½ lbs of ground beef

2 tbsp cornstarch

2 tsp salt

2 tsp dried parsley

1 ½ tsp garlic powder

1 ½ tsp onion powder

2 cups milk

18 ounces beef stock

12 ounce egg noodles

6 ounces sour cream

1 cup grated parmesan cheese


Directions:

1. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5-7 minutes. Drain and discard grease.


2. Combine cornstarch, salt, parsley, garlic powder, and onion powder.


3. Pour cornstarch mixture, milk, beef stock, and egg noodles into the skillet of beef. Bring to a boil. Cover and reduce heat. Simmer, stirring occasionally, until noodles are tender, about 8 minutes.


4. Stir in sour cream and parmesan cheese. Add extra beef broth for a thinner gravy. Heat and serve, do not return to a boil.
