Each month, the Food Shelf selects a Recipe of the Month, and provides shoppers with all the ingredients necessary to prepare the dish, along with a recipe card. Our October, 2020 Recipe of the Month is Classic Corn Chowder was our most popular recipe of the month in 2019. The recipe is adapted from A Taste of Home.

1 large onion, chopped
½ cup butter
4 medium potatoes, peeled and cut into ½ inch cubes
2 ½ cups of vegetable broth
1 can cream style corn
1 can whole kernel corn, drained
2 cups of milk
1 tsp of salt
¾ tsp ground black pepper
1. In a large pot, sauté onion in butter until tender.
2. Add the vegetable broth and potatoes; bring to a boil and cook until the potatoes
are tender about 15-20 minutes.
3. Reduce heat to low and add the kernel corn, creamed corn, milk, salt and pepper.
4. Cook for 5-10 minutes or until heated through, stirring occasionally.
